Fun fact for the curlous: What makes Weihenstephaner Hefeweissbier Alkoholfrei special is the method used to remove alcohol. Unlike many other brewing processes, fermentation is not stopped. The brewers make a regular wheat beer, seal it in a vacuum, and then gently heat it to evaporate the alcohol at a mild 40°C. This preserves the lively, fresh taste, hints of cloves and honey, and the subtle yeast note. By the way, since the base beer is already fully fermented, the yeast has consumed the sugars from the wort.
